Easy Weeknight Pizza and Pasta Dishes

Whether you’re sad to see summer go or are ready to welcome early fall with open arms, one thing’s for sure…easy dinners are essential this time of year! As soon as the school bus starts making regular appearances in your neighborhood, life cranks back up to full speed. Between work, school, activities, games and homework, you need dinner options you can get on the table quickly, so you have more time to catch up on everyone’s day. Here are some deceptively simple recipes, they’ll rush home for.

It’s a dish so fresh and delicious, your family will forget how easy it is to prepare. (They may even offer to clear dinner plates, just so they can swipe that last piece or two!)

Margherita pizza begins with one of our fantastically helpful Italian Pizza Dough Kits. If you’re planning on pizza in the evening, you may want to let your dough rise in the morning or afternoon to cut down prep time even further.

You’ll get two pizzas out of this recipe, which may be music to high-schoolers ears, and it really is as easy as brushing the crust with oil and adding sauce, cheese, and toppings. Bake about 15 minutes, top with fresh basil and sit down to a decadent weeknight treat.

When school starts up again, chances are you’re going to hear “Mooooom…can my friends stay for dinner?” every so often. Don’t panic…be prepared with this pizza-ish, but-not-exactly pizza, crowd-pleaser.

After your dough rises, cut it into strips to form breadsticks. Bake for 15 minutes or so and then sprinkle with parmesan and our Pizza Seasoning Spices, which give you four different spice combos in one container.

Now, the dip. Provolone, cream cheese, Italian sausage, pepperoni…should we go on? It really is scoopable pizza! Once your dip is prepared and baked, top with basil and serve up with your sticks. Ready to get a bit outside the box? Break out that canned tuna and let’s get cooking! If you’ve got adventurous eaters, they may just fall in love with this true Italian classic.

After your dough has risen, crank up your oven to 500 degrees and spread our Crushed San Marzano Style Tomatoes on your rolled out dough. Sprinkle with your cheeses and top with your tuna, Castelvetranos, Calamatas, and capers.

As simple as this pizza is to make if it’s too complex for little palates, try it for a date night in paired with an Italian pinot grigio and finished up with tiramisu.

Now it’s time for some easy, peasy pasta dishes. And we start with one of everyone’s favorites, fusilli! If you have kids that are a bit picky when it comes to eating veggies, this is the perfect way to get them to get them loaded up with fresh broccoli and cauliflower.

Cook up your pasta according to package instructions (save that pasta water!) as you steam your cruciferous veggies. Warning: this is where it gets really delicious. Heat up the heavy cream and stir in some grated cheese and our Sun-Dried Tomato Pesto. Add more sun-dried tomatoes along with your florets and pasta and cook together for about 2 minutes. If the mixture is too thick, add a bit of pasta water to thin it all out.

Between the silky sauce and the fun-to-eat texture of the pasta, this will be one dish that is bound to make a repeat appearance on your dinner table.

Shrimp is the perfect protein to make a light weeknight supper into something special. Here, paired with juicy grape tomatoes and our yummy organic whole-wheat orzo, the tomato-basil shrimp make this dish shine.

As your orzo cooks hit a hot pan with olive oil, garlic, and red-pepper flakes. A minute or two should infuse the oil with flavor before you add your shrimp. Cook your shrimp for about five minutes (it should turn pink) then remove it.

Next add your wine, butter, tomatoes, re-incorporate your shrimp and add the orzo. Once these flavors combine, you’re good to go for a weeknight dinner made in minutes.
