Olive, Tomato and Pesto Grain Bowl

  1. Bring a large pot of salted water to a boil. Cook orzo for al dente texture, according to package instructions. Drain, transfer to a large serving bowl and set aside to cool, about 10 minutes.
  2. In a medium bowl, whisk pesto and oil to combine. Add pesto mixture to serving bowl with pasta. Toss well to coat.
  3. Divide pasta evenly into bowls and serve topped with tomatoes, olives, microgreens, Parmesan and basil.
