  1. Cook farro according to package instructions. Place in a large bowl and set aside to cool.
  2. Meanwhile, arrange salmon filets in a small baking dish. Drizzle with 2 tablespoons olive oil. Sprinkle with 1 teaspoon of salt. Allow to marinate for 15 minutes.
  3. To create the dressing, whisk together lemon juice, oil, honey, salt, pepper buttermilk and chives in a small mixing bowl. Pour over farro and toss to combine
  4. Preheat grill to medium-high heat. Grill salmon until cooked through, about 3-4 minutes per side.
  5. Divide farro into 4 bowls. Top with asparagus, peas, artichokes, salmon and sprouts or any greens of choice. Serve immediately.
