  • To create cheese sauce, heat half and half in a saucepot on a medium setting. Whisk in cornstarch. Bring to a simmer.
  • Lower heat to add cream cheese and stir until melted. Add Cheddar and Havarti by the handful, stirring until fully melted.
  • Arrange tortilla chips on a large serving dish. Top evenly with cheese sauce, olives, peppers and avocado.
  • Sprinkle with cilantro and serve.
