Summer Peppers, Sausage and Kale with Pasta

Who says a hearty summer meal can’t be healthy? We take everything to love about summer eating and put it all into a bowl of pasta. Grilled peppers and fennel perfectly complement hot Italian sausage and fresh greens for a dish that’s light, fresh, summery and perfect for pasta lovers everywhere.

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain, reserving 1/4 cup of hot pasta water.
  2. Preheat grill on high, covered, 10 minutes, then reduce heat to moderately high.
  3. Heat 1 tablespoon oil in large skillet. Add the sausage and sear on each side for 2 minutes. Add enough water to the pan to cover the sausage and cook covered for 10 minutes. This will steam the sausage to lock in moisture before grilling.
  4. Remove fronds from fennel bulb and cut in half. Brush oil on all sides on both pieces and place on grill rack. Roast, turning occasionally with tongs until outside is blackened and bulb softens, 12-15 minutes.
  5. Transfer peppers to a bowl, then cover and let steam 10 minutes. Transfer fennel to a cutting board and let rest for 5 minutes.
  6. Turn grill down to medium heat. Place the sausages directly on the grill and grill for 5-7 minutes per side, or until cooked through. Transfer to a plate and cover with foil to keep warm.
  7. Cut fennel into slices and transfer to large bowl. Peel and seed peppers, cut into 1/4-inch-thick strips and add transer to the bowl.
  8. Sliced sausage into round bite size pieces and add to the fennel and pepper mix.
  9. Add pasta and kale to the mix and toss to combine.
  10. In a small bowl, combine pesto, 2 tablespoons of oil and 1/2 cup of reserved pasta water. Stir into the pasta mix, season with salt and pepper to serve.
