Zesty Chicken Tacos

Everyone loves easy to make tacos and these zesty chicken with a simple Calabrian Chili Pepper marinade are perfect for weeknight meals, game day parties or after school snacks.

  • Add all of your marindate ingredients in a bowl and whisk until combined.
  • Place the chicken thighs into a bowl and add your marinade.
  • Let the chicken rest for at least two hours (overnight for maximum flavor).
  • Char the tortillas over a gas flame and set aside.
  • Preheat the grill to a high heat.
  • Grill the chicken until no longer pink in the center and transfer to a plate.
  • Chop the chicken into thin strips and place in the center of each tortilla.
  • Top with a spoonful of bruscehtta, a sprinkle of grated cheese and a pepperonicini.
  • Garnish with plenty of fresh chopped cilantro.
