Ingredients

3 large English cucumbers, sliced thinly on mandolin (about 6 cups)
25.5 oz. DeLallo Mild Pepperoncini or DeLallo Hot Pepperoncini (about 2 cups), drained; tops removed and sliced
1 cup DeLallo Sweet & Tangy Pepper Drop
2 tablespoons freshly chopped parsley, for garnish
Dressing:
1/4 cup DeLallo Golden Sweet Balsamic-Style Vinegar
3 tablespoons lemon juice
2 teaspoons lemon zest
1/2 teaspoon dill
1/2 teaspoon fresh ground black pepper
1/2 teaspoon DeLallo Sea Salt Grinder
3/4 cup DeLallo Extra Virgin Olive Oil

Directions

To create dressing, combine vinegar, lemon juice, zest, dill, black pepper and salt, garlic and salt in a mixing bowl. Slowly whisk in olive oil to incorporate. Whisk until emulsified.
In a large serving bowl, combine sliced cucumber, pepperoncini and Pepper Drops in a large mixing bowl and combine. Add dressing and mix well to coat.
Serve sprinkled with fresh parsley.
