The must-have ingredient that all pizzaioli (Italian pizza makers) swear by, Italian type 00 flour is made with high-quality durum wheat that is specially milled and sifted for a superfine, powder-like texture. This fine grind, along with the ideal gluten content, creates an exquisite elasticity perfect for pizza dough—whether you're craving a traditional thin Neapolitan-style crust or a thicker chewy focaccia.

Combine flour mix and yeast packet in a large bowl with 1 1/4 cups (300ml) of lukewarm water. Stir with a fork until dough begins to form. Knead by hand for 3 minutes until dough is soft and smooth.
Transfer to a clean, lightly oiled bowl and cover tightly with plastic wrap. In a warm place, allow dough to rise for about 45 minutes or until doubled.
Divide dough into 2-4 equal pieces (depending on size and thickness desired). Spread dough onto a greased baking pan or pizza stone and accent with your favorite toppings.
Preheat and bake at 450˚F for 10-15 minutes, or until crust is golden brown and toppings are cooked.
Q. How long should I let the dough rise?
The longer you let the dough rise, the better. That simple. Refrigerate for anywhere from 45 minutes to 8 hours to allow flavors to develop. For a super flavorful dough with just the right structure, we recommend giving your dough 24 hours to develop in the refrigerator. Be sure to let the dough come to room temperature before stretching and kneading.
Q. How long can the dough be refrigerated before use?
The dough can be refrigerated for up to 3 days before use.
Q. If I don't use all the dough at once, can I freeze it?
Yes. After the dough rises, you can freeze the dough you aren't using. The dough will be good to use for 3-5 weeks. Shape dough into pizza-portioned balls. Lightly wipe with olive oil and place in a freezer bag. Try to remove as much air from the bag as possible. Be sure to let the dough come to room temperature before stretching and kneading.
