Ingredients

  • 1 (1-pound) bag DeLallo Mafaldini
  • ¼ cup salted butter
  • 2 large yellow onions, thinly sliced into half-moon shapes
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup (1 stick) salted butter
  • 1 cup heavy cream
  • 1 cup DeLallo Parmigiano-Reggiano, grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Parsley, chopped

Directions

  • Melt butter in a large skillet. Once melted, add onions and saute for 25 to 30 minutes. Stir occasionally until the onions are very tender and have a caramel color.
  • Season with salt and pepper and transfer to a plate and set aside.
  • In the same skillet, melt the butter. Constantly stir and scrape the pan as you go.
  • As soon as the butter turns chestnut brown and smells nutty, remove the pan from the heat and set aside to cool slightly.
  • Bring a large pot of water to a boil and cook the pasta according to package directions. Drain and reserve 1 cup of the pasta water.
  • Use either a food processor or immersion blender: combine the caramelized onions, browned butter and ½ cup water. Blend until well combined.
  • To the original skillet over medium heat, add the blended onion mixture, heavy cream and parmesan. Cook until the cheese is melted and the sauce is heated through.
  • Add the cooked pasta to the skillet and toss until the noodles are evenly coated with the creamy sauce. If the sauce is too thick, add a bit more of the reserved pasta water.
  • Top with parmesan and chopped parsley and serve.
