Ingredients

1 (12-ounce) package DeLallo Potato Gnocchi or DeLallo Gnocchi Kit
2 tablespoons unsalted butter
1 small zucchini, sliced
1 small yellow squash, sliced
1 cup corn kernels (about 2 ears)
2 cloves garlic, chopped
1/2 cup mascarpone cheese
1 tablespoon freshly chopped basil
2 tablespoons DeLallo Simply Pesto® Traditional Basil Sauce
1/2 lemon, zested
Salt and pepper to taste

Directions

Bring a large pot of salted water to a boil. Cook gnocchi according to package instructions.
Meanwhile, in a large saucepan, melt butter over medium heat. Add zucchini, squash, corn and garlic. Cook until tender, about 8 minutes.
Remove from heat. Stir in mascarpone, basil and pesto, until cheese has melted. Add gnocchi and toss to coat. Serve sprinkled with lemon zest.
