Creamy Gluten-Free Gnocchi with Summer Vegetables
Fresh basil, earthy squash and sweet summer corn star in this gluten-free gnocchi dish. In a sauce of creamy mascarpone and fragrant basil, our gluten-free recipe is sure to be a new family favorite!
- Bring a large pot of salted water to a boil. Cook gnocchi according to package instructions.
- Meanwhile, in a large saucepan, melt butter over medium heat. Add zucchini, squash, corn and garlic. Cook until tender, about 8 minutes.
- Remove from heat. Stir in mascarpone, basil and pesto, until cheese has melted. Add gnocchi and toss to coat. Serve sprinkled with lemon zest.
