Espresso Coffee Cake

INGREDIENTS

  • 2 ¼ cups all-purpose flour
  • 1 ¼ teaspoon baking soda
  • 1 ¼ teaspoon baking powder
  • 1 ½ tablespoons DeLallo Instant Espresso Coffee Powder
  • 2 ½ sticks (1 ¼ cups) butter
  • 1 ¼ cups sugar
  • 1 ½ teaspoons vanilla extract
  • 2 large eggs, plus 1 yolk
  • 9 ounces vanilla yogurt
  • 6 ounces bittersweet chocolate chunks
  • Glaze:
  • 6 ounces bittersweet chocolate, chopped
  • ¾ cup heavy cream

DIRECTIONS

  1. Preheat oven to 325°F. Butter a Bundt cake pan.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder and espresso powder.
  3. In the bowl of a stand mixer, beat butter and sugar until light and fluffy. Mix in vanilla and 2 eggs. Last, add the single egg yolk and mix on high until light and airy.
  4. Add half of the yogurt and half of the flour mixture to the bowl. Mix on low until fully combined. Add to the bowl the remaining yogurt and flour mixture. Mix once more until full combined.
  5. Gently fold the chocolate chunks into the batter, and then transfer to the cake pan. Evenly distribute the batter. Bake for 60 minutes.
  6. Meanwhile, heat sauce pan over medium heat. Add the heavy cream and heat for 10-15 minutes without bringing it to a boil. Stir occasionally. Add in the chocolate and whisk to combine. Heat until chocolate is melted and creates a smooth glaze.
  7. Allow glaze cake to cool for at least 1 hour before glazing and serving.
