Mocha Mascarpone Swirl Brownies

  • Preheat oven to 350˚F. Ready an 11” x 17” baking sheet with nonstick cooking spray.
  • In a large mixing bowl, combine brownie mix, expresso powder, egg, vegetable oil and water until blended. Fold in morsels.
  • With an electric mixer in a separate bowl, beat mascarpone cheese and sugar until blended well.
  • First, spread half of the brownie batter onto the prepared baking sheet. Next, pour mascarpone mixture on top. Top with tablespoon-sized dollops of the remaining brownie batter.
  • Swirl mixture with a spoon, pulling batter from the bottom up through the mascarpone layer to the top.
  • Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool completely on wire rack or refrigerate for 2 hours before cutting.
  • *NOTE: Brownies may seem under-baked when warm, but will firm up once cooled.
