How do I use pizza oil on dough? Oil in pizza dough is a controversial topic, depending on who you ask. While it is ok to use some oil on the dough, don’t overdo it. Once your dough is kneaded into a ball and ready to rise, this is the time when it is ok to use a bit of oil to coat the dough. It will add a bit of flavor, but it is mostly to keep the dough moist and elastic. Too much oil won’t allow the dough to properly develop its flavor (and air pockets).
