Jerk Chicken Pasta

Easier and quicker than a trip to the Caribbean, this jerk chicken pasta recipe begins with a flavorful jerk seasoning that you can make in your own kitchen from spices you already have on-hand. We take spice-rubbed chicken breasts partnered up with sautéed peppers and onions then combine them in a simple cream sauce with our penne pasta to create a unique dish that will shake up your pasta night menu in the yummiest way.

Ingredients

  • 1/3 cup + 1 tablespoon Jamaican Jerk Seasoning (1 tbsp. garlic powder, 3 tsp. cayenne pepper, 2 tsp. onion powder, 2 tsp. dried thyme, 2 tsp. dried parsley, 2 tsp. sugar, 2 tsp. salt, 1 tsp. paprika, 1 tsp. allspice, 1/2 tsp. black pepper, 1/2 tsp. dried crushed red pepper, 1/2 tsp. ground nutmeg and 1/4 tsp. ground cinnamon)
  • 1 (16-ounce) package DeLallo Penne Rigate
  • 3 boneless skinless chicken breasts
  • 2 tablespoons DeLallo Extra Virgin Olive Oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • ¼ cup chicken broth
  • ½ cup heavy cream
  • ½ cup freshly grated Imported Italian Parmigiano-Reggiano

Directions

  • Bring a large pot of salted water to a boil. Cook pasta according to package instruction. Drain.
  • In the meantime, season the chicken by rubbing the jerk seasoning all over to coat.* Heat 1 tablespoon of oil in a large skillet over medium heat. Add the chicken to the pan and sauté until cooked through and golden brown, about 8 minutes per side. Remove chicken from the pan and set aside to rest.
  • Add remaining oil and the peppers to the pan. Cook until peppers soften, about 4-5 minutes.
  • Stir in the green onions and garlic. Cook until they become fragrant, about 1 minute. Season with 2 teaspoons or more of the jerk seasoning.
  • Stir in chicken stock and cream. Continuously stirring, simmer until sauce thickens, about 5 minutes. Add the Parmesan and stir until melted. Slice chicken and add to the pan. Add pasta and stir to combine.
  • Divide among bowls or serve family-style.
  • *If making homemade jerk seasoning, combine spice ingredients in a small bowl. Seasoning can be stored in an airtight container for up to 3 months.

Note: This recipe can be made gluten-free by substituting the Penne Rigate pasta with DeLallo Gluten Free Penne Pasta.
