Other extra virgin olive oils can be made with any olives—one variety or many blended varieties—from any country or region, unless stated specifically. To be called “extra virgin olive oil,” producers must extract the olive oil by cold pressing the fruit (no heat or chemicals). The olive oil must also meet strict chemical and sensory parameters (color, odor, acidity, etc.) to be deemed an authentic extra virgin olive oil.
