Prosciutto is an artisan air-cured pork that hails from Italy. Made with the hind leg of the pig, prosciutto crudo (the cured variety of prosciutto) is then cleaned and heavily salted for curing. The curing process takes place in a cool, dry environment over the course of a few weeks. Additional aging—anywhere from 14 to 36 months—helps to develop the prosciutto’s meaty flavor and rosy pink hue. Before packaging, the ham is washed of excess salt. Along with cured prosciutto (or prosciutto crudo), there is a variety of prosciutto called prosciutto cotto, which is cooked.
