Sopressata is a traditional Southern Italian sausage, or salumi, made up of coarsely ground pork and select seasonings. This style of dry sausage is air-cured for anywhere from 3 weeks to 3 months—a method that began as a way to preserve pork before refrigeration technology. Sopressata can be made with many different ingredients and in many variations depending on which region it was made. Our Sweet Sopressata is a milder, yet full-flavored, dry sausage seasoned with black pepper, fresh garlic and complementary spices.

There are a few significant differences between sopressata and salami. Traditionally, sopressata uses leaner cuts of pork for a dryer texture than salami, which uses fattier meats that are chewier. Sopressata is more robust in flavor with more seasoning than the typical salami, which is milder. Sopressata is made with coarser ground cuts of pork, instead of the finely ground cuts of pork of salami. This gives sopressata a meatier, heartier texture.
The biggest difference between Hot Sopressata and Sweet Sopressata is the level of heat in each. Hot Sopressata is made with hot chili peppers and whole peppercorns for a spicier flavor than Sweet Sopressata, which is considered to be zesty, not spicy, in flavor.
