Asiago Chicken Melt Panini With Havarti And Sun-Dried Tomatoes

This is no ordinary chicken sandwich. We take our beloved Asiago Chicken recipe (a favorite for decades) and load it up with garlicky sautéed greens, sweet and chewy sun-dried tomatoes and smooth melty Havarti cheese.

  1. In a large saucepan, heat olive oil on a medium-high setting. Once hot, add garlic and cook until just golden brown and fragrant, about 1-2 minutes. Discard garlic.
  2. Add spinach to the pan and sauté in garlicky oil until wilted and tender, about 5 minutes. Remove from heat.
  3. Assemble each panini beginning with a slice of bread, a slice of Havarti cheese, then a warm Asiago Chicken breast. Top with sautéed spinach and two sun-dried tomatoes.
  4. Coat grill pan with cooking spray or use a panini press to gently flatten sandwiches.
  5. Serve immediately.
