Beans & Greens Pasta with Spicy Italian Sausage & Passata

We take the all-around favorite Italian dish, Beans and Greens, and create a hearty and flavorful pasta dish featuring hot Italian sausage, rich tomato passata, earthy greens and our Tortiglioni pasta. Make it your go-to weeknight pasta dish.

INGREDIENTS

DIRECTIONS

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instruction. Drain, reserving 1 cup of hot pasta water.
  2. Heat a large saucepan over medium-high heat. Add the olive oil and the sausage. Sauté until browned and cooked through, about 8-10 minutes. Transfer to a plate using a slotted spoon. Set aside.
  3. Add cannellini beans and red pepper flakes to the pan. Stirring occasionally and mashing some of the beans with a spoon, cook until they begin to brown, about 5 minutes. Transfer half of the beans to the plate with the sausage.
  4. Stir in the passata, then bring to a boil. Once boiling, reduce heat and simmer for 10 minutes.
  5. Add the hot pasta, escarole and ½ cup of the hot pasta water. Continue to cook until escarole is wilted and the sauce has thickened, about 4 minutes. Add sausage and the remaining beans.
  6. Divide among bowls and serve sprinkled with grated cheese.
