  • Bring a large pot of water to a boil and cook the pasta according to package directions. Drain and reserve 1 cup of the pasta water.
  • Heat a large saute pan over medium-low heat. Add olive oil, shallot, cherry tomatoes, garlic and salt and simmer 10 to 15 minutes, or until tomatoes begin to burst.
  • Add the marsala to deglaze the pan, stir until fully evaporated, about 1 minute.
  • Blend the tomato mixture with an immersion blender until smooth. (Or transfer the tomato mixture to a blender).
  • Stir in heavy cream and cook for 1 to 2 minutes until thoroughly combined.
  • Add the pasta to the tomato sauce, toss and cook on medium-low heat for 5 minutes.
  • Remove from heat, add parmesan cheeese and toss.
  • Top with burrata, parsley and a drizzle of olive oil.
