  • Preheat oven to 400˚F.
  • In a small mixing bowl, combine pesto and olive oil.
  • Rub pork chops with salt and pepper. Brush each side with pesto mixture.
  • Arrange pork chops on a nonstick baking sheet. Scatter with onions and garlic. Drizzle with remaining pesto mixture. Roast for 6-8 minutes, until pork chops are juicy but cooked through.
  • Remove from heat and transfer to a plate. Cover pork chops with foil and allow them to rest for about 5 minutes before serving.
  • Serve drizzled with pan juices, onions and torn basil (optional).
