Gnocchi with Kale in a Creamy Cheesy Tomato Sauce

A soon-to-be favorite, this irresistibly creamy, cheesy gnocchi dish is going to blow you away. We’re sure of it. Starring our fresh-tomato Marinara Sauce and pillowy potato gnocchi, there’s no ill this recipe can’t cure.

DIRECTIONS

  1. Preheat oven to 400˚F. Prepare gnocchi according to package instruction.
  2. Meanwhile, heat olive oil in a saucepan. Once hot, add garlic and tomatoes. Sauté for 2-3 minutes. Add marinara sauce and cook until bubbling and tomatoes begin to burst.
  3. Remove from heat. Add heavy cream, kale and gnocchi to the pan. Gently stir to coat.
  4. Transfer half of mix to baking dish. Add ½ of mozzarella, basil and Parmesan cheese. Add the remaining mixture and top with remaining cheeses and basil.
  5. Bake for 10-15 minutes until the cheese is melted and the sauce is bubbling. Remove from oven and let rest 5-10 minutes. Optional to garnish with more Parmesan cheese and basil.
