Gnocchi with Shaved Brussels Sprouts and Bacon

  • Bring a large pot of salted water to a boil for gnocchi. Cook according to package instruction. Drain, reserving 1/2 cup of pasta water to finish sauce.
  • Meanwhile, in a large saucepan on medium-high heat, cook bacon for about 2 minutes, or just until it begins to brown. Add sprouts to the pan. Sauté in bacon juices until golden brown, about 3-4 minutes.
  • Gently stir in gnocchi and toss to evenly distribute. Add reserved pasta water if desired. Cook together for 2 minutes to marry flavors. Remove from heat and stir in Parmesan.
  • Serve immediately topped with sliced almonds.
