This super easy Italian-style tomato soup features our famous potato dumplings alongside zesty Italian sausage all topped off with nutty, briny Parmigiano-Reggiano. Talk about comfort food!

  • In a large saucepan, heat olive oil on a medium setting. Add sausage. Once sausage is just starting to brown, add onions and garlic. Cook together for 3 minutes, or until sausage is cooked through and onions become translucent.
  • Add stock, Pomodoro Fresco Sauce and beans to the pan. Bring to a boil. Reduce heat and cover. Simmer for 10 minutes.
  • Gently stir in gnocchi and spinach leaves. Cook together until gnocchi float to the top and spinach is tender, about 3 minutes. Season with salt and pepper to taste.
  • Serve topped with freshly grated Parmigiano.
