Quick Cook Broccoli & Cheese Risotto

Broccoli and cheese are a duo just about as famous as peas and carrots. They come together in this easy weeknight risotto. Serve this creamy Italian rice dish as a side or the main event.

  1. In a saucepan on high heat, bring water and risotto to a boil. Reduce heat to low and cover.
  2. Stirring occasionally, cook for 15 minutes or until water is absorbed.
  3. Meanwhile, heat the oil in a large saucepan over medium-high heat. Add the garlic and red pepper. Cook until fragrant, about 2 minutes.
  4. Add the steamed broccoli and turn down the heat to medium. As the broccoli continues to cook, use the back of a fork to break it into smaller pieces. Cook for 10 minutes. Discard the garlic.
  5. Add the broccoli to the risotto. Stir to combine.
  6. Serve sprinkled with Parmigiano-Reggiano.
