Quick Cook Risotto with Shrimp

INGREDIENTS

  • 1 (6.2 -ounce) package DeLallo Quick Cook Cheese Risotto
  • 2 cups of water
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 teaspoons minced garlic
  • ½ cup dry white wine or sherry
  • Fresh parsley, chopped for garnishing

DIRECTIONS

  1. In a saucepan on high heat, bring water and risotto to a boil. Reduce heat to low and cover.
  2. Stirring occasionally, cook for 15 minutes or until water is absorbed.
  3. Meanwhile, melt the butter in a large saucepan over medium-high heat.
  4. Add the garlic. Sauté until fragrant, about 1 minute.
  5. Stir in the shrimp. Sauté until they turn pink, about 2 minutes.
  6. Add wine to the saucepan. Cook for 1-2 minutes, or until wine has evaporated.
  7. Add the shrimp and pan juices to the risotto about 2-3 minutes before it is done. Stir to combine.
  8. Serve sprinkled with fresh parsley.
