Rigatoni with Eggplant, Turkey Sausage and Ricotta

A hearty meal idea inspired by the colder weather, this soon-to-be-favorite pasta dish features eggplant and zesty turkey sausage with a few spoonfuls of sweet and creamy ricotta to round out its harmony of flavors.

  1. In a large saucepan, brown turkey sausage over medium heat. Once cooked through, about 3-5 minutes. Remove from pan and set aside.
  2. Add olive oil and garlic to the pan. Just as garlic becomes golden, remove from the pan and discard. Sauté eggplant in garlicky oil. Cook until softened, about 6-8 minutes.
  3. Return sausage back to the pan. Stir in crushed tomatoes and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally.
  4. In the meantime, bring a large pot of salted water to a boil for pasta. Cook according to package instructions. Drain.
  5. At the end of its cook time, add ricotta and fresh basil to the sauce. Toss with hot pasta in the pan. Cook together for about 2 minutes to marry flavors.
  6. Serve.
