Sausage Rigatoni

A hearty meal idea inspired by the colder weather, this soon-to-be-favorite sausage rigatoni pasta dish features eggplant and zesty turkey sausage with a few spoonfuls of sweet and creamy ricotta to round out its harmony of flavors.

  • In a large saucepan, brown turkey sausage over medium heat. Once cooked through, about 3-5 minutes. Remove from pan and set aside.
  • Add olive oil and garlic to the pan. Just as garlic becomes golden, remove from the pan and discard. Sauté eggplant in garlicky oil. Cook until softened, about 6-8 minutes.
  • Return sausage back to the pan. Stir in crushed tomatoes and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally.
  • In the meantime, bring a large pot of salted water to a boil for pasta. Cook according to package instructions. Drain.
  • At the end of its cook time, add ricotta and fresh basil to the sauce. Toss with hot pasta in the pan. Cook together for about 2 minutes to marry flavors.
  • Serve.
