Rigatoni with Peppers & Sausage

Spice up the familiar classic rigatoni and red sauce with zesty Italian sausage. We use fresh, sweet red and yellow peppers, imported San Marzano tomatoes and Pecorino Romano to complement this dish’s hearty, spicy flavor.

  • Bring a large pot of salted water to a boil for pasta. Cook pasta according to package instructions.
  • Meanwhile in a large skillet, heat olive oil on a medium-high setting. Cook sausage with onions, breaking apart meat with a wooden spoon. Cook for 5 minutes, then add peppers.
  • Once peppers begin to brown and sausage is cooked through, season with pepper flakes. Add the wine and allow to simmer for 1 minute while stirring. Add tomatoes. Break them apart with a wooden spoon. Bring to a boil, then reduce heat and simmer covered for 15-20 minutes. Add hot pasta water if sauce becomes too thick.
  • Add hot cooked pasta to the skillet and sauté together for 2 minutes to marry flavors.
  • Serve sprinkled with Romano.
