Spicy Beans And Greens With Italian Sausage

The Italian classic Beans and Greens is transformed into a hearty dish with a spicy kick. We take everything you love about the traditional dish and add spicy Italian sausage.

  1. Bring a large pot of salted water to a boil. Cook escarole for about 5 mins or until stems are tender. Drain, reserving 1 cup of hot water.
  2. Heat a large saucepan over medium-high heat. Add the olive oil and the sausage. Sauté until browned and cooked through, about 8-10 minutes. Transfer to a plate using a slotted spoon. Set aside.
  3. Add passata, garlic and ½ cup of hot water, and salt to the pan and bring to a boil. Cook until liquid begins to reduce. Stir in escarole, beans and sausage. Continue to cook until the sauce has slightly thickened, about 8 minutes. Remove and discard garlic. The sauce should be almost soupy in consistency.
  4. Stir in the ½ cup of the grated cheese. Toss until cheese is melted and the sauce is glossy, about 1 minute.
  5. Divide among bowls and serve sprinkled with grated cheese.
