Ingredients

  • 1 ½ pounds bone-in chicken thighs
  • 1 (16-ounce) package DeLallo Potato Gnocchi
  • 1 cup flour, plus 3 tablespoons
  • 5 tablespoons butter
  • 1 shallot, thinly sliced
  • 3 cloves garlic, minced
  • 3 teaspoons chopped fresh thyme
  • 1 ¼ cups chicken broth
  • ¼ cup dry white wine
  • ½ cup heavy cream
  • 10 ounces fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Directions

  • Preheat oven to 400˚F
  • Lightly season the chicken with salt and pepper. Allow it to rest for 5 to 10 minutes.
  • Meanwhile, bring a large pot of water to a boil. Cook gnocchi according to package instructions. Drain and rinse to prevent sticking.
  • Place 1 cup of flour in a shallow dish. Dredge chicken in flour to coat on all sides.
  • Melt 2 tablespoons butter in a large oven-proof skillet over medium-hight heat. Working in batches, add chicken thighs to the skillet in a single layer and cook until golden brown and cooked through. Chicken should reach an internal temperature of 165 ˚F, about 5 to 6 minutes per side. Once cooked, remove from the skillet and set aside.
  • Melt the remaining butter in the skillet. Cook the shallot, stirring frequently, until tender, about 3 to 5 minutes. Stir in garlic and thyme. Cook until fragrant, about 1 minute. Whisk in 3 tablespoons of flour until lightly browned, about 1 minute.
  • Gradually whisk in the chicken broth and wine. Whisk until thickened, about 3 to 5 minutes. Add the heavy cream and continue to whisk until thickened, about 1 to 2 minutes. Season with salt and pepper.
  • Stir in the cooked gnocchi and spinach. Cook until the spinach has wilted, about 1 to 2 minutes. Return chicken to the skillet and sprinkle with Parmigiano.
  • Place the skillet in the oven and bake until bubbly, about 12 to 15 minutes. Remove from the oven and serve immediately.
