  • For ease of rolling, warm tortilla between two slightly damp paper towels in the microwave for about 20 seconds. Drain peppers and artichokes by lightly patting with a papertowel.
  • Lay tortilla out flat and begin layering ingredients. We chose to begin with the spinach, careful to keep ingredients within the center third of the tortilla. Next, top with turkey, Swiss cheese, red peppers and avocado. Salt and pepper to taste.
  • Fold in the top and bottom of tortilla by about 1-2 inches. Tuck in one side and roll to enclose fillings. To eat at a later time, tightly wrap with plastic or freezer paper. Refrigerate.
