Vegetarian Bolognese

This veggie-heavy pasta sauce is hearty and filling, but without the meat. At the heart of this chunky vegetarian sauce is our signature Soffritto base and a handful of fresh, fragrant herbs. You won’t miss the meat!

INGREDIENTS

DIRECTIONS

  1. In a large saucepan on a medium setting, heat oil. Once hot, add onion and garlic. Cook for 3-4 minutes. Stir in the soffritto and the olives and cook for another 3 minutes.
  2. Add the red wine to the saucepan. Once the alcohol evaporates, add the lentils, vegetable stock, bay leaves, herbs, tomatoes salt and pepper. Bring to a boil. Once boiling, reduce heat, cover and simmer for 30 minutes, stirring occasionally.
  3. Taste and adjust spices to your preference. Serve with your choice of pasta.
