Like the Italian pesto you know and love, this uncooked “raw” sauce is a classic Spanish recipe originating in Catalonia. Featuring sweet red peppers, spicy pepper and crisp pine nuts, our take on this classic crudo sauce is the perfect complement to our hearty Whole-Wheat Pasta.

Directions

  • In a food processor, combine first 8 ingredients. Pulse until chopped finely. While continuing to pulse, add olive oil in a slow, steady stream. Season with salt and pepper.
  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain.
  • In pot, toss hot pasta with Romesco Sauce. Serve immediately topped with grated Manchego cheese.
