Nothing says summer like a fresh berry trifle and this delicious layered dessert recipe is bound to make you the star of the picnic. Layered up with delicate lady finger cookies and fresh fruit tossed in a tangy-sweet apricot balsamic, this dessert tastes as good as it looks. Just add sunshine, friends and a chilled white wine.

  • Using a hand mixer or a stand mixer fitted with a whisk attachment, beat heavy cream, powdered sugar and vanilla until soft peaks form. Set aside.
  • In a mixing bowl, whisk together the apricot spread and vinegar. Add all of the berries and gently toss to coat.
  • In a large trifle dish (or in individual glasses), build trifle in even layers of whipped cream, cookies, berry mix and cherry spread. Repeat layers until you reach the top. Finish with an even layer of the whipped cream.
