Named after the town of Amatrice, in Lazio, Pasta Amatriciana Sauce includes zesty tomato sauce flavored with savory pancetta, onion and garlic. A traditional dish perfect for any occasion.
Bring 5 quarts of salted water to a boil for pasta. Cook pasta according to package instruction. Reserve 1 cup of pasta cooking water to finish sauce.
Meanwhile in a large saucepan, simmer onions, garlic and pancetta in olive oil. Season with salt and pepper to taste. Once onions become soft and transclucent, about 5 minutes, turn up heat to medium.
Add tomatoes to the pan. Bring to a quick boil, then reduce heat and simmer while pasta cooks. Toss hot pasta with sauce and cook together for another 2 minutes to marry flavors.
