  • Heat oil in a large pot over medium heat. Cook onion, celery, garlic, bay leaf, salt and pepper, stirring often until garlic is deep brown, about 8 minutes.
  • Rinse the pork bones and add to the pot. Cook, turning often for 10 minutes. Add wine and vinegar. Bring to a simmer and cook scraping up any brown bits until liquid is reduced by half, about 4 minutes.
  • Cover bones with water. Stir in thyme and bring to a boil. Reduce heat and allow to simmer partially covered for 3 hours. Skim the top with a mesh strainer a few times to remove any foam that rises.
  • Add the rinds and simmer for another 2 hours, stirring often to prevent cheese from sticking to bottom of pot.
  • When finished, strain broth. Use broth immediately or allow it to cool to room temperature before refrigerating or freezing for later use*.
  • *Broth can be refrigerated for up to 1 week or stored in the freezer for 3 months.
