What is pure olive oil?
Pure olive oil is a type of olive oil that has been extracted by refining (typically a heat source) to remove any impurities in acidity, flavor, etc. The resulting oil is lighter in flavor and color—compared to extra virgin olive oil. Its high smoke point means that it can be used for high-heat cooking.
Pure olive oil is a good choice for those who aren’t fond of the rich, raw olive flavor of extra virgin olive oil. It is also preferred for cooking, as pure olive oil can withstand higher heat cooking methods. It’s a great choice for frying, braising, roasting, grilled and sautéing.
Light olive oil is more refined than pure olive oil and so its flavor is the most neutral and its color is the lightest. It is not “light” in the way of calories, but of flavor.
