A wheat is selected for its high gluten index, gluten content and protein content. This superior wheat is carefully milled into a coarsely ground semolina flour and then combined with fresh, mineral-rich mountain spring water. Pasta is extruded with artisanal bronze dies to create that perfect sauce-hugging texture. To reproduce the traditional way of making pasta, noodles are dried slowly at low temperatures.
