Asparagus Cacio E Pepe

Around here, we really love to add asparagus to a nice pasta dish. Asparagus Cacio E Pepe adds the perfect amount of crunch and flavor—not to mention an extra dose of nutrients.

INGREDIENTS

DIRECTIONS

  1. Cook your whole wheat pasta until al dente (about 5 to 6 minutes) and reserve 1⁄2 cup of pasta water. Then set the pasta and water aside until the sauce and asparagus are ready.
  2. Chop your asparagus and cook it in a skillet with salt and pepper.
  3. Combine cheese, milk, butter, garlic, salt, and pepper in a pot.
  4. Heat the cheese sauce ingredients until they melt together and a sauce forms, stirring every 2 to 3 minutes.
  5. Transfer your cheese sauce to a big skillet and add the pasta water, stirring to combine.
  6. Add cooked pasta to the sauce. If it’s too thick, you can use more pasta water to thin it. Add asparagus to the pan and top with Parmesan cheese.
  7. Serve with lemon zest and parsley. Enjoy!
