Gluten-Free Sweet Pea Bacon Gnocchi Mac & Cheese

This quick-and-easy dish is a great way to fix up something tasty and gluten-free for the whole family. Crisp, savory bits of bacon and sweet peas star alongside our Italian Gluten-Free Gnocchi in a light creamy cheese sauce of mascarpone, Parmesan and Fontina.

  1. Bring a large pot of salted water to a boil.
  2. In a large saucepan on medium heat, cook bacon until browned and crispy, about 5 minutes. Transfer to a paper-towel-lined plate and set aside.
  3. Cook pasta according to package directions for al dente texture. In the last minute of cooktime, add peas to the pasta water. Reserve 1 cup of pasta water. Drain and return pasta and peas to the pot.
  4. Stir in 1/4 cup of reserved pasta water and mascarpone. Add Parmesan shredded cheeses a little at a time, continuing to stir. Loosen sauce with extra pasta water if desired. Add bacon and mix to incorporate. Season with salt and pepper to taste.
  5. Serve topped with grated Parmesan.
