  • Whisk 2 eggs, ricotta, pepper and garlic salt together in a large bowl. Stir in orzo and grated cheeses to combine.
  • Roll the orzo mixture in ½” to 1” balls.
  • In a mixing bowl, beat the remaining egg with salt. Place the flour and the breadcrumbs in 2 separate small shallow bowls.
  • Dip each orzo ball into the flour, then the egg mixture and then the breadcrumbs. Set aside on a plate.
  • Fill a saucepan with 3-4 inches of oil. Set at medium-high. Once hot, place pasta balls in the pan using tongs. Fry in batches, careful not to overcrowd the pan. Fry pasta balls until golden brown, turning occasionally to fry each side.
  • Remove from oil and place on a paper towel lined plate to drain. Transfer to a serving dish and serve while hot.
