Easy Mediterranean Spaghetti Squash Bowls

This spaghetti squash recipe is going to change your life. No, really. It’s colorful, bursting with big flavors and super easy to make. We load it up with all of your favorite Mediterranean flavors—artichokes, olives, sweet roasted red pepper, garlic and feta.

  1. Preheat oven to 400°F. Line a large, rimmed baking sheet with parchment paper.
  2. Cut off the very top and bottom of the squash. Slice the squash in half lengthwise. Scrape out the seeds. Drizzle with 2 tbsp. of extra virgin olive oil. Season with salt and pepper to taste.
  3. Place squash, cut-side down, onto the prepared baking dish. Bake until tender, about 35-45 min.
  4. Remove from the oven. Allow squash to rest until cool enough to handle.
  5. Meanwhile, in a large bowl, combine the artichokes, peppers, onion, olives, chopped parsley, garlic, lemon juice, the remaining 1 tbsp. olive oil and salt. Stir to combine. Taste. Add more lemon juice and salt if necessary. Set aside.
  6. To assemble the bowls, use a fork to fluff up the squash. This will make it easier to eat. Then, divide the artichoke salad between the squash bowls and top each one with a generous drizzle of olive oil. Sprinkle with feta. Serve immediately.
