Espresso-Crusted Baby Back Ribs

  1. Preheat oven to 375°F. Preheat grill on medium-high heat.
  2. Rub ribs with salt and pepper and both sides, and then place on the grill. Sear ribs on both sides, about 10 minutes.
  3. Transfer ribs to a large baking sheet and allow to cool for 15 minutes.
  4. Meanwhile, in a mixing bowl, combine espresso powder, cumin, paprika, garlic, salt and pepper.
  5. Rub ribs with espresso powder mix.
  6. Place ribs in the oven for 40 minutes.
  7. Reduce heat to 250°F, cover ribs with foil and cook for 90 minutes.
  8. Remove from oven and let rest covered in foil for 5-10 minutes.
  9. Serve drizzled with honey.
