Garden Rigatoni with Italian Sausage & Parmigiano

  • Bring a large pot of water to a boil. Once boiling, add salt and greens. Blanch greens by submerging in boiling water for about 2 minutes. Remove broccoli rabe quickly with a slotted spoon and immediately place in a bowl of ice water to stop the cooking process and preserve its bright green color. Drain greens well and set aside. Do not drain water in the pot.
  • In a large saucepan, toss squash with 3 tablespoons of olive oil. Sauté until lightly golden, about 8 to 10 minutes. With a slotted spoon, transfer squash to a bowl and set aside.
  • Add pasta to the pot of boiling water (that was used for the greens) and cook according to package instructions. Once al dente, drain. Reserve 1/2 cup of cooking water for finishing dish.
  • Add garlic and sausage to the pan. Sauté on medium heat until cooked through, about 5 minutes. Return squash to the pan. Stir in greens and tomatoes. Cook together for another 5 minutes.
  • Toss with pasta with ingredients in the saucepan. Add pasta water, if necessary. Cook for 2 minutes to marry flavors.
  • Serve topped with shaved Parmigiano-Reggiano.
