  • 1 cup flour
  • 2 tablespoons cornstarch
  • 3 teaspoons salt
  • 1 teaspoon pepper
  • 2 pounds beef chuck roast, fat trimmed and cut into 1-2” chunks
  • 1 carrot, diced
  • 1 celery stick, diced
  • 1 small onion, diced
  • 6 carrots, sliced diagonally in thick pieces
  • ½ pound fingerling potatoes, whole or halved
  • 3 ounces mixed dried mushrooms
  • 1 (28-ounce) can DeLallo San Marzano-Style Petite Diced Tomatoes
  • 32 ounces beef broth


  • In a large bowl, combine flour, cornstarch, 1 teaspoon salt and pepper. Add beef and toss to coat.
  • Set Instant Pot to Sauté. Add beef and cook until browned on all sides, stirring occasionally about 6-8 minutes.
  • Add carrot, celery onion, vegetables, tomatoes, broth and remaining 2 teaspoons of salt to the Instant Pot. Select the Stew/Meat setting (about 40 minutes, high pressure). Once cooked, allow everything to rest for about 10 minutes before releasing the steam.
  • Divide into bowls and serve with crusty Italian bread.
