Ingredients

  • 1 large onion, diced
  • 1 (6.7-ounce) DeLallo Soffritto Sautéed Vegetable Base
  • 3 cloves garlic, minced
  • 1 ½ cups green lentils
  • 1 (28-ounce) can DeLallo San Marzano-Style Tomatoes Diced
  • 2 teaspoons fresh thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 cups vegetable broth
  • Freshly grated Parmigiano-Reggiano, optional

Directions

  • Add to the Instant Pot, add onion, soffritto, garlic, lentils, tomatoes, thyme, oregano, salt and pepper. Pour broth over mixture and stir to combine.
  • Set Instant Pot to Manual and High. Set for 28 minutes. Once finished, set valve to quick release.
  • Remove lid, divide into 4 bowls, top with Parmigiano-Reggiano and serve.
