Instant Pot Lentil Soup

Ready to cozy up with this classic cold-weather soup? It’s delicious, hearty and as simple as throwing all the ingredients in the Instant Pot. The perfect warm-you-up weeknight recipe.

INGREDIENTS

  • 1 large onion, diced
  • 1 (6.7-ounce) DeLallo Soffritto Sautéed Vegetable Base
  • 3 cloves garlic, minced
  • 1 ½ cups green lentils
  • 1 (28-ounce) can DeLallo San Marzano-Style Tomatoes Diced
  • 2 teaspoons fresh thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 cups vegetable broth
  • Freshly grated Parmigiano-Reggiano, optional

DIRECTIONS

  1. Add to the Instant Pot, add onion, soffritto, garlic, lentils, tomatoes, thyme, oregano, salt and pepper. Pour broth over mixture and stir to combine.
  2. Set Instant Pot to Manual and High. Set for 28 minutes. Once finished, set valve to quick release.
  3. Remove lid, divide into 4 bowls, top with Parmigiano-Reggiano and serve.
