  • Heat a large stockpot over medium-high heat. Add oil. Once hot, add the sausage and cook until browned, about 6-8 minutes. Transfer to a paper-towel-lined plate and set aside.
  • Heat remaining oil in the stockpot and add carrots, celery, and onion. Sauté until vegetables become soft, about 5-7 minutes.
  • Add garlic and stir until fragrant, about 30 seconds.
  • Add in beef stock, tomatoes, dried herbs and salt and pepper. Bring to a boil.
  • Once boiling, add the pasta and cook until pasta is al dente, about 7-9 minutes.
  • Stir in the cooked sausage and spinach. Once the spinach is wilted, remove from heat and taste to adjust salt and pepper.
  • Serve with freshly grated Parmigiano Reggiano.
