Mediterranean Chicken with Olives

  1. Preheat oven to 400˚F.
  2. In a small mixing bowl, combine lemon juice, olive oil and garlic. Use a resealable plastic bag or a deep dish to marinate chicken breasts. Make sure they are completely coated. Allow chicken to marinate for about 20 minutes.
  3. Meanwhile, prepare a deep baking dish with a thin layer of olive oil. Arrange marinated chicken and marinade in the pan with onion and olives. Sprinkle with fresh herbs and top with lemon slices.
  4. Bake for 20-25 minutes until chicken is cooked through. Remove chicken from the oven.
