Sausage and Pepper Pappardelle Pasta with Basil Pesto

This hearty pasta recipe is big on flavor: rich ribbons of golden egg pasta with sweet peppers, garlic and Italian sausage in a bold tomato sauce. We top it off with a few spoonfuls of our fragrant basil pesto, for the win.

  1. Place a large saucepan over medium-high heat. Add the oil and Italian sausage to the pan. Cook for 3-4 minutes on all sides or until completely browned. Remove sausage and set aside.
  2. Add the soffritto, peppers and garlic to the same saucepan and stir. Sauté until peppers are softened, about 6-8 minutes.
  3. Stir in the beef broth. Cook for 5 minutes. Stir in the tomatoes and simmer for 10-12 minutes more.
  4. Meanwhile, bring 5 quarts of salted water to a boil. Cook the pasta according to package instructions. Drain.
  5. Slice the Italian sausage and add to the saucepan. Stir in the hot pasta and cook together for 2-3 minutes to marry flavors.
  6. Serve drizzled with pesto.
