Spicy Vodka Sauce

Turn your jar of spicy tomato pasta sauce into a velvety tomato-cream vodka sauce with sweet mascarpone cheese and just a few ingredients.   1. Heat oil in an ovenproof skillet over medium heat. Sauté onions until golden brown, about 6-8 minutes.
  2. Add the vodka to the pan and cook until liquid is reduced, 2 to 3 minutes.
  3. Stir in the jarred sauce. Simmer for 15 minutes. Stir in the cream and cook until thickened, about 2 minutes.
  4. Remove sauce from heat. Add 1 pound of cooked pasta (of your choice). Toss to combine.
  5. Top with dollops of mascarpone. Place skillet under the broiler until cheese melts and begins to brown, about 5 minutes.
  6. Remove from oven and serve.
